Guacamole and Focaccia for a Monday Breakfast

Ok, lets get serious, these are my two favorite foods and i want to share with you their recipe.

First Guacamole!

What we need? 

½ a small red onion (if you love green onion, go for it)

3 ripe avocados

1 hand of fresh coriander

6 ripe cherry tomatoes

2 limes

extra virgin olive oil

How is done?

Chop the onion, cut the avocados in half and scoop the flesh onto the board.

Chop it all together until well combined, add coriander, lime juice, olive oil, salt and black pepper to taste.

Focaccia!

What we need?

500 g white flour

300 g bake flour

500 g water

7g dried yeast

15g salt

vegetable oil , for greasing

extra virgin olive oil

1 hand rosemary sprigs for decoration

How is done?

Combine the bread flour and water, yeast and 15g salt in a mixing bowl and mix until smooth. Cover the mixing bowl with a towel and leave to rest, for 45 minutes or until the dough has doubled in size, so you will get a puffy dough.

During this time, prepare a baking tray by lightly oiling the base and sides using vegetable oil. Put the dough to the baking tray. Spread out evenly using the palm of your hands, add some extra virgin olive oil over the surface of the dough using your fingertips and press small dimples but not all the way through to the base.

Place the baking tray in the oven for 30 minutes or until lightly golden at 180°C.

Once cooked, stud the bread with fresh sprigs of rosemary and sprinkle with a pinch of salt. 

Save it with freshly made guacamole.
